To follow up on Saturday's message, we've been consistently overwhelmed that our fans have loved the keto cacao nibs that first debuted at KetoCon back in July of 2019 (...we've been able to sample them with lots of folks, and, without a doubt, in terms of feedback this has been our most successful product to date). Plain and simple, it makes you want to eat more cacao.

A bit of a refresher about the nibs: The nibs are sweet but not too sweet, crunchy, and 100% keto, as they are sweetened with a bit of yacon and monk fruit. This means, get all the antioxidants, iron, magnesium and healthy fat from cacao. As time has gone on, I've learned that these nibs are a wonderful source of "sweetness" for recipes. Instead of having to spend a lot of time dosing monk fruit, you can add these to certain recipes (not all recipes, as they are sweet but not that sweet), and they can help balance flavors out. In particular, I love making salads with them, making a very simple "dressing" that is 25 grams extra-virgin olive oil, 25 grams keto cacao nibs, and 7 grams of lime juice. You can see this in a recipe that I've been using a lot below:

Kale Antioxidant Salad

TECHNIQUE AND INGREDIENTS:

Difficulty: (minimal)

Total time Prep/Cooking: 15 minutes

Ingredients (not counting olive oil, lime, lemon, salt) - 5 ingredients

Utensils needed: Kitchen knife, spoon, hand peeler

Total Macros of Dish:

Fat: 32G

Net Carbs: 9

Protein: 5

Recommended For 2-3 people, so divide Macros by 2 or 3.

Benefits: Blueberries, kale and and cacao provide a combination rich in antioxidants, vitamin C and iron - plant-based diets in particular benefit from a combination of vitamin c making iron more bio-avaiable.

Ingredients:

Medium avocado - 200s gram

Half big cucumber - 150 grams

Kale - 50 grams

Blueberries - 50 grams

Sauce

25 grams extra virgin olive oil, 25 grams keto cacao nibs, 7 mL (can be measured on the gram scale at 1:1) of lime juice (or lemon juice)

  • Just a knife or hand peeler and spoon
     
  • Take kale, rinse and let dry while prepping other ingredients.
     
  • Take two medium ripe avocados (approximately 200 grams - Macros are set to 200 grams total) and open them in halves and then draw a gridline in the avocado halves, and then scoop them out and reserve in a bowl.
     
  • Peel half a large cucumber and slice 1/4 niche pieces.
     
  • Mix 25 grams of keto cacao nibs with 25 grams of olive oil and 7 grams of lime juice. You can use lemon juice to substitute as well.
     
  • Rip the kale into pieces, discarding the spines of kale depending on the type of kale you have (that which curls into an iceberg-lettuce type shape will have fewer spines) whereas that which comes in bunches of stalks will have a more defined spine).
     
  • Incorporate ingredients, mixing by hand or salad tosser, evenly coating the salad with the nib and extra virgin olive oil mixture.

Hi Kickstarter Family!

Happy Tuesday to each and every one of you. Today I locked orders, giving you 48 hours to update your addresses. I'm really excited for everyone who has been so patient and supportive to be able to connect the dots all the way from Colombia, taste what we've made, follow us as we launch on this incredibly special journey. Below I'll update you on when you should expect to receive your bars. One important note - if you have any issues about shipping address make sure to message me, and in addition, if you have a PO BOX as the current address, please change it to a physical address.

Production Updates: We were able to approve 3 straight LOTS of Double Chocolate Jungle, putting our estimated completion date at next Wednesday right now (I will update here on Friday). The ability to scale to make 1000-5000 bars/day right now is definitely still limited by our understanding if we can approve bars according to their texture or dryness. Daily, as we learn how to produce this last flavor, we must let them cool and "settle" to approve them. We got the rhythm of this quickly with the Matcha Macadamia bar, but it was far more difficult with the Brazil Nut bar. We have a large oven-dehydrator coming at the end of the month which helps so much in addition to the mixer and this Friday, will be testing the chocolate covering process. 

The scaling out of the nut bars, has proven to be the largest "scaling challenge" we have had as a company. Yenifer, our food engineer and I meet weekly to discuss projects. We've spent a lot of time studying the "art" of creating the right humidity, crunchiness, and texture in an artisanal factory, and I've given the production team leeway to be able to change conditions based on their intuition. In the last 3 weeks as well, I've started to initiate some really large changes in the factory that I'll be talking about in the next few weeks. We've gotten feedback on the 3 keto chocolate bars, and people are absolutely THRILLED! Like, they really really love them. I'm expecting us to sell out for the Christmas season, so, we are actually making plans to change our production lines away from our PALEO bars. 

Lastly, in the next two weeks, we will be launching some incredible specials for the holidays, and as always, for our Kickstarter community, I'm going to make sure you all have first dibs and the best deal available for any other products that we might be launching, particularly any extra add-ons or re-orders after the first shipment.

Happy Thanksgiving and Send-Out Countdown

Hi Kickstarter Family!

I want to wish an incredible Thanksgiving to everyone. Our time with close family and friends is so precious. Sharing gratitude and food with one another is one of the beautiful activities we can do. We will remember many of these moments for the rest of our lives. My brother decided to come down and visit me in Medellin, and I have not seen him for a while and Im so grateful for that.

Right now we have finished 2 of the 3 references for the kickstarter, and have started to scale out Double Chocolate Jungle, and are about 30% through. There has been a delay, and a big reason for the delay. And its not machinery, although we had some flooding recently that had us lose a day, its honestly been me. One of our backers said something that I know through and through, if your product is not the best (while also being the healthiest), its not going to be successful. And so, I've wanted to make our chocolate macadamia bar even better, and we raised the macros to 17.6 grams of fat, higher than any other, by adding in even more chocolate. But it took some time. And, honestly, I apologize for that, because I did not let you guys know that would even be a consideration early on. Im thrilled by the fact that the bar is healthier, has more flax seed and really is incredible in its macros. 

Bar production, we have also dealt with having to reject entire lots because of the fact that in learning how to make them, there have been scalability issues. We knew about this and budgeted time in, but that means that we are going to without a doubt be delivering from Colombia within between 5-10 business days based on a high rejection rate of 50% being the 10 business days. Im super excited, beyond thrilled honestly, but also, I've wanted to ask you for just a little more time so we can get everything to you safe and sound. All other products have been waiting to ship- nibs, chocolate bars - which have all gotten advancements actually. 

Double chocolate jungle

The plan in the next few days is to stay close to you guys, and right now I'll be updating you guys every two days, as I've been working on some awesome recipes as well for the keto cacao nibs, and want to share those with you. Right now, I've made a total of 10 recipes.

In the meantime, as we now have a last known date of when we will ship out and its coming quickly, I'll be locking orders for the kickstarter - any address changes, I know there are 2 or 3  folks moving, please make them!

 Below, I am going to share with you a really great pumpkin recipe that I've been working on.

Pumpkin has per 100 grams, 6 net carbs, and so we made a recipe based around 300 grams of cooked pumpkin. You can boil or roast pumpkin. 

1. Bring water to boil in medium pot .

2. Take 300-500 grams of pumpkin and add to water, and then leave on medium high for 20 minutes, until pumpkin is tender and you can basically spoon it from the peel like a soft melon.

3. In blender, add your nut butters - I have used brazil nut and almond butter for example. Then add your coconut flour. I use dessicated coconut flour. Blend thoroughly in Ninja.

4. I use about a 10 X 8 inch glass baking container, I will grease the sides with a little bit of coconut oil, and then add my mixture in. It should be about 3/4 of an inch in thickness.

5. Then I will add the keto cacao nibs. I'll press them in and almost lightly cover them with the puree, so that they do not get as much direct heat as if lightly topped. 

6. Bake for 300F for 30 minutes, or until you can put a fork or pin in the mixture and it comes out clean. 

Ingredients:

300 grams pumpkin (18  net carbs) 

100 grams nut butter (almond) - 2.3 net carbs

50 grams brazil nut butter - 3.6 net carbs

75 grams dessicated coconut (I use this instead of coconut flour. Coconut flour at is going to have 4 net carbs at 14 grams which is a bit high, but you can use a lot less), whereas the dessiccated coconut has just under 3 net carbs per 75 grams.

75 grams keto cacao nibs (6 net carbs) 

You can add cinnamon or turmeric as well. No need to sweetened because the pumpkin, coconut and keto cacao nibs already sweeten. With 6-8 portions and 33 net carbs, this is really an incredible dessert that I've made more and more recently. Hope you enjoy it.
