Hi Kickstarter family,

7 days left, alive, and breathing, thriving. Things are rushed, as I go to New York City tomorrow for a wedding of one of my best friends, so, found the space this weekend to think, do some exercise. How was your weekend?

We are right now a few pledges away from our first goal of $10,000. I really can't believe it, speechless. The hard work is paying off. And because of you, your questions, support, clarifications, and again, twice now the support, which I honestly can't believe.  Thank you.

We will build out and share details of the business model for part 2 and explore some rewards. You guys will have priority for pledges on all gifts with larger discounts than any others introduced - there will be more chocolate bars involved. We will also share some more other Kickstarters that are supporting us in an effort to raise awareness about us and the sustainability of others.

Recipe #1 - Who's in for Vegan Keto?

Hi Kickstarter family,

The relationship between vegan keto, fasting and health...

for those who want to take a dip into vegan keto! I didn't expect to be digging into this, but coincidentally this Monday I started eating vegetarian keto (with eggs as my savior) as one of the periodic trials I always seem to be doing, and today making the dive into vegan keto for the next 5 days. Who else wants in? It will never be easier, so let me know...

I've been following a very knowledgeable vegan doctor called @theveggiemd, and she's been outlining her personal experience as someone with 0 experience in keto, and the medical community's research around it.

Right now, there is not a tremendous amount of research on LONG-TERM keto (vegan and omnivore). However, there has been significant research on fasting as well as high fat, low carb low protein keto vegan in the SHORT TERM. Here are the results. Short term vegan keto leads to a downregulation in the IGF-1 insulin-like growth factor that is tied to 1-aging, 2-is a "hotspot for cancer mutation." Protein intake is positively correlated to IGF-1 which accounts for keto's success here.

For those not familiar with keto but supporting us here on Kickstarter, a 5-day vegan keto diet does not have negative effects on your metabolism, but can lead to serious benefit in IGF-1.

First dessert recipe for vegan keto:

  • 1 Avocado
  • 70 grams of almond milk
  • 20 grams of MCT oil
  • 70 grams of chocolate that is ketogenic (you can use ours once we come out with it and send it which is 80% cacao 20% allulose, you can use bakers chocolate and sweeten it with allulose, or erytritol although erytritol im not in love with, or you can buy a bar that is 90% or higher, Lindts 99% is alright)

Instructions:

  • Blend the avocado and almond milk first (I use a ninja that costs 30 dollars)
  • Break up the chocolate into small pieces. Put it in a bowl. Add the mct oil over it. Put it in a microwave and check on it every 20 seconds, microwaves vary.
  • Pour the melted chocolate over the avocado almond milk mixture and blend.
  • Pour into a bowl. Top with 15 grams of macadamias and this comes out to about 4 net carbs depending on the size of the avocado.
  • You can serve it right away or refrigerate it for an unreal consistency.

Lastly, one of the things I mention in the Kickstarter is that this is carbon-neutral. I have a great friend that owns a company called carby box that lets you offset very easily. And we really support the idea of low-carbon footprint. Our greatest expense carbon-wise is electricity and shipping in our factory, waste is quite minimal. I also wanted to share with you guys some other kickstarter projects. Since starting this, Ive been keeping up with a few projects to learn, and exchange ideas with other company's. And I wanted to drop quick mentions of these projects particularly the ones that are sustainable. Thanks

Keto Education Resources and Cacay (Last Call!)

Hi Kickstarter family! 

I wanted to provide you guys with some amazing resources on keto in the next few days.

I have a wonderful gift and have built a team that is expert in taking products and bringing flavor to them, making them healthy and delicious. But that is not the same as being an expert on keto. Keto can be a bit complicated, especially if you have other dietary restrictions (I'll talk about vegetarian keto, and vegan keto shortly), but this is a really wonderful piece, a longer read, about the benefits of ketosis and the misconceptions of it:

One thing thats interesting, the more you read about keto, is that there is kind of a difference between "clean" keto and "dirty" keto - there is a difference between eating natural ingredients, and what one expert in the industry calls "putting MCT oil on a bowl of white rice" which will get you into ketosis, but wont serve you. 

The idea is that learning about whole foods, and the food system is important, and that that eating a low carbohydrate diet might serve you. Based on your genetics, your lifestyle, your family's interests, it might also not be the best decision for you, and you can always change that. We on this kickstarter are offering up an option that serves the keto low-carb and zero-sugar diet that is delicious, that you don't need to prepare (you can travel with bars without the chocolate covering quite easily),  and is as "clean" as possible (and we are working on making it even cleaner and better daily). But it might not be the best thing for lots of people, at this place and time. But at least reading, and educating might get you thinking a little bit. 

The resources and the passion people have for keto to help educate you and me is amazing though. And i learn so much every day. Do you guys have a favorite resource on keto and foods? Share it with me in the comments.

... we work on these bars every day that ends with Y, and have been in the lab this weekend. There are some new ingredient additions below we could use your help with. Short video attached.

First, we are over the halfway mark for the Kickstarter and 58% funded and so we thought that to CELEBRATE the halfway point, we want to do a little "From the Amazon" Day in homage of all these Prime Day specials.  

The "From the Amazon" special - all Kickstarter backers who have given a reward in exchange for a physical gift will receive a sample of CACAY, the Amazonian seed that is incredibly rich in Omega Fatty Acid. Notes of coffee, butter, hay.

We will extend this to all backers that have made a pledge already or will make a pledge by 10:59 PM EST on Wednesday. After that, doors close on the cacay. So if theres a friend or family member who might be interested in supporting our mission and enjoying what we do. Right now we have been looking to bring out more of the matcha - we use an amazing organic matcha, and to bring out its bright notes, looking to add black sesame seed.

We are also looking at actually baking Double Chocolate Jungle. The taste is unreal, and quite crunchy. Looking to make sure they are not too crunchy. Do you prefer chewy or crunchy? The other bars we do not subject to heat. The flavors blend together beautifully, with keto cacao nibs, macadamia, and almond. Nutritional value would vary, with this losing some. 

Back to making some matcha magic.

Integration, Keto in Miami and Cacay

...back in Medellin, back in Ketosis, and a quick update - we are over 55% funded today...and I feel every day, with each convo, more closely aligned with our backers. Understanding what resonates with them. 

The last few days Ive also been calming my body down - and doing it in Miami, before heading back on Wednesday to Medellin. That quiet work is such a beautiful mystery, because I feel like theres no real category for it in the English language, our vocabulary isn't adequate to describe it..See, after we launched at KetoCon, I worked on some personal coaching in New York and have really looked towards "integrating" as some friends call it (I bet a lot more of that will happen after Burning Man next month as well). I sometimes get upset that I haven't "squeezed" all the wisdom-juice out of periods of intense activity and personal growth (like coaching and launching a kickstarter in 30 days).  So, I made sure to sleep, take turmeric, walk, go on runs, meditate. I've definitely been processing a lot of fear, and fear can be hard to pin down. Sometimes our old self fears that we will change, and shed, and we cling on. That gets to deep stuff, death, our deepest fears of abandonment, and having clarity around it takes time. You don't want to misunderstand.

Interestingly, Ive found that exercise sometimes enables, but also prevents this calming down that Ive looked for - I ran about 13 miles on a foggy morning in Miami. After running, playing around with electrolyte consumption, running on keto, or running but doing slight carbo-loads that are burned off during the run...I still havent figured it out.

Cool backer insight - In Miami I saw lots of keto foods there, even the hotels have options, which show its more mainsteam. What do you casually pick up at the store thats keto? One of our backers summed it up well. She's been keto for years, and she's extremely intentional about ingredients. So she could rarely pack snacks to travel with, that sort of thing. Now, thats changed. You see cool bars and 100% chocolate in CVS. So, there are options (now, not every company puts good ingredients in their products. Some have their first ingredient as erythritol for example). But, I think that we have turned a corner on ingredient-consciousness in the United States, or at least parts of the USA.

The Cacao Nib Starter kit is logistically up and our page has a more organized flow...we put in some testimonials too, particularly of the nibs, and the bar testimonials go up right after some new short videos :) Since we started to launch this such a short time ago we are, as my friends describe it, building the rocketship in middair, finding the way to blast off.  http://e.fnd.to/ketodose if you wanna share the link with any friends :)

And lastly, we also got some CACAY in the mail, from a place in the jungle called Vaupes. This took only 3 months, so we are in for a treat. We mention it briefly in the campaign..this is something we want to share with you. CACAY has 53% fat (89% of that are omegas) and tastes delish (not like sacha inchi). We are looking at it as a promising ingredient to help support communities in the Amazon. To date, we work with a community on the sustainable packaging side. Ill show you photos of both below. We are probably the first few thousand people to really have seen the CACAY seed as its mostly being used for its oils right now.

If you guys have interest, message me, as we can also likely offer some small samples of CACAY for every backer (just so they can see and try it..a seed or two each) or we can post it as an additional product to redeem in higher quantities. For now, they will go back to be vacuum sealed as these are only samples :) We really hope to be able to raise the 10,000 and beyond to continue to offer these innovative ingredients we geek out over.  Likewise the chocolate box pictured below, we could likely offer as a gift as well, and make it with three flavors of keto chocolate, but once again, drop us a line and let us know, as its important to us. Although to have your exotic Christmas gift taken care of thats super sustainable with biodegradable and all-natural packaging, well, I know that would excite me.
